Our Hickory Syrup is made from the bark of local Shagbark Hickory trees. We gather the bark, and add only organic cane sugar and create a flavor sensation! Making maple syrup has always been a way of life in the Allegheny Highlands of Virginia. Pat remembers, when he was young, a layer of steam filling the valley as each farm along Back Creek made enough syrup for themselves, and a little extra to sell. Today, ours is the only working sugar house left on Back Creek, and while we strive to maintain traditions, we are also taking maple syrup in whole new directions. We are creating maple infusions using native plants as well as exotic blends. And our barrel-aged syrups combine the sweetness of maple with the amazing flavors of fine spirits.
